Wildcat Taco Soup
This was in our local paper this morning and is From the UK College of Agriculture...Go Wildcats! We had this for dinner tonight and it is one of the best soups we've ever had! It's especially good with baked tortilla chips :) This would be a great soup for a Super Bowl Party as well!
Ingredients
1 lbLean Ground Beef
1 12 oz Can Sweet Yellow Corn
1- 16 oz Can Pinto Beans
1- 16 oz Can Black Beans
1 Can Rotel with Green Chiles
1 Can Stewed Tomatoes
1 4-Cup Box Vegetable Broth
1 Packet Taco Seasoning
1 Packet Dry Ranch Dressing
Directions
1. Brown lean ground beef and drain
2. Rinse and drain pinto beans, black beans, and corn.
3. Add remaining ingredients to large pot
4. Heat until boiling
5. Simmer for 30 minutes
6. Transfer to Crock Pot
7. Simmer on Low an additional 2 hours
